Hotan brine-basted grilled lamb is a unique, traditional barbecue dish from southern Xinjiang. The lamb is carefully selected, skewered, and slowly roasted over smokeless fruit wood charcoal. While grilling, a simple brine is prepared. Once the meat is done, the brine is drizzled over the hot skewers.
